American Chicken Parmesan


2 – 3 Chicken breasts, split in half or 2 lbs of chicken parts

2 1/4 cups fresh, unseasoned bread crumbs

3/4 cup melted butter or margarine

1/2 cup freshly grated Parmesan Cheese

2 – 3 garlic cloves, crushed

4 cups chopped parsley

3 teaspoons Koops’ Stone Ground Mustard

pinch salt

2 hours

Wash and dry the chicken pieces thoroughly.  In a large shallow dish, combine the melted butter with the garlic and mustard. Combine the bread crumbs with the cheese, salt and parsley in another dish. Dip the chicken pieces into the butter mixture, then roll them in the crumb mixture, coating well. Place the chicken pieces in a large shallow baking dish and pour the remaining melted butter mixture over them. The dish may be made in advance up to this point. Bake the chicken at 350°F for 1 1/2 hours. Baste with the pan drippings once or twice during the baking time.
