Apple Slaw
INGREDIENTS
- 3 cups grated cabbage
- ½ cup sliced radish
- 2 large apples julienned
- 2 large carrots shredded
- ½ cup chopped walnuts
- ¼ cup pumpkin seeds
DRESSING:
- ¼ cup apple cider vinegar
- ¼ cup olive oil
- 2 tbsp maple syrup
- 2 tbsp Koops’ Dijon Mustard
- ¼ tsp sea salt
- fresh crack of pepper
DIRECTIONS
- Mix together all the salad ingredients and set aside.
- Chop all the vegetables and nuts and pop into a large bowl.
- Now add the dressing and mix together.
- Let sit in the fridge for at least a half an hour before serving (enhances the flavor).
- ENJOY!
