Spicy Coconut Chicken
2 tablespoons honey
2 tablespoons Koops’ Horseradish Mustard
2 teaspoons soy sauce
1 teaspoon light brown sugar
1 whole chicken breast, skinned, cut into 1-inch cubes
2/3 cup unsweetened shredded coconut
Combine honey, mustard, soy sauce and brown sugar in bowl. Dip chicken cubes into honey mixture, then into coconut. Place on baking sheet. Bake at 400°F for 15 minutes, turning chicken frequently.
These Coconut Chicken bites have a great Horseradish kick.
